Professor Samonds is a retired professor of Nutrition. He received his Ph.D. in Nutritional Biochemistry from the University of Arizona in 1969. As a professor, first at Harvard’s School of Public Health and more recently at the University of Massachusetts, he has taught more than 1000 dieticians the chemistry and physiology of nutrition as it relates to human disease. He is the founder of the Massachusetts Nutrient Data Bank, a repository of food composition information for the evaluation of dietary intakes, which is used as a research and teaching tool by many institutions. His interest in the relationship between diet and Alpha-1 dates from the diagnosis of his wife Carolyn’s disease in 1993. He was one of the principal writers of the Nutrition chapter in The Big Fat Reference Guide. He retired in 2005 to pursue his hobby of theater set designing and scenery painting.
There are no magical nutrients or miraculous foods that will cure Alpha-1. But there are nutrients which have been shown to suppress the inflammatory response and to protect lung tissue from damage. In addition, there are eating patterns which can improve your breathing. Practical dietary advice will be discussed, which can retain the pleasure of eating, but can also make eating a positive healthy activity. In this session, we’ll weigh the risks and benefits of alcohol (in moderation) and we’ll also debunk a few food myths along the way.
